Widely known as the chef and owner of the critically acclaimed restaurant Vue du Monde, Shannon Bennett is highly regarded also for his appreciation of the quirky, interesting and artistic. No wonder then, that in moving Vue de Monde into the CBD in 2005 and meeting Joost, that a collaborative relationship was quickly formed.  Joost and Shannon have cooked up many ideas since then, inspiring each other and pushing boundaries.

The food philosophy at Vue de Monde has always involved using ingredients that are ecologically produced, and recently this approach has extended through to the whole operation. Shannon’s businesses are on an exciting journey, beginning with an assessment of environmental impacts, to become environmentally responsible, sustainable entities.

Shannon’s involvement in designing the menus for Greenhouse by Joost reflects their shared vision – a respect for natural resources presented with creativity and flair.
